Merry Christmas and enjoy!
- Tropical Moscato Sangria: Muddle together 1 can of passionfruit pulp, 1/2 bunch of mint, some peach slices, and two bottles of white sparking sangria into a jug. Add loads of ice if you’ve got it. If you wanted to be extra naughty, you could add a big splash of Cointreau!
- Oysters are amazing on their own. Just add a splash of lime juice to enhance their briney flavour.
- Prawns with Dipping Sauce: Mix together some good mayonnaise, some smoked paprika, cayenne pepper and a squeeze of lemon juice. Serve with your favourite Australian prawns.
- Christmas Ham: This goes without saying-Christmas ain’t christmas without a leg of ham! Just serve cold.
- Perfect Weber Roast Chicken: Rub your choice of spice mix, salt, pepper and oil over the skin of a 1.8kg chicken. Stuff some lemons inside the chicken cavity, place onto a trivet and cook in the Weber (set to indirect cooking) for approximately 1 hour.
- Roast Pumpkin and Macadamia Salad: While the chicken is roasting, add some sliced pumpkin to the tray. When roasted and cooled, mix with some toasted macadamias, baby spinach, sliced spanish onion, and dress with a mix of honey and soy sauce. Photo credit: CookMeEatMe
- Berry Pavlova: Mix together thickened cream, softened mascarpone cheese and a little icing sugar. Place mixture on top of a pre-bought quality pavlova nest, and then top with fresh berries. Photo credit: Taste
