Easy Camp Cooking Recipes
For me, the mention of camp cooking evokes fond memories of some very basic meals enjoyed as a child. Charred snags and onions on the barbie (if the kookaburras didn’t steal them first), Dinner Winner with mince, a can of baked beans warmed over the fire, or a crusty damper filled with honey. What these meals lacked in culinary sophistication, they more than made up for in belly warming, soul soothing, hearty goodness that you could never replicate in a five star restaurant.
Fast forward twenty years and I now have a family of my own. I fully intend on replicating the wonderful camping experiences that I had as a child for my own sons-but perhaps with a little more flair when it comes to our food. It doesn’t get much better than sharing a delicious meal with friends and family, around a glowing fire, with a clear, starry night sky above.
I like to ensure that my kitchen kit is always stocked with plenty of dried spices, fresh chilli, garlic and ginger, as well as canned tomatoes, pulses, flour and dried fruit. And wine. Can’t forget the wine. Sometimes I even add it to the food!
These days, it’s easy to go a little gourmet while you’re out and about-and it’s amazing what you can do with a can and a plan. So, here is a selection of fuss free, practical and tasty recipes suitable for Complete Campsite kitchens, or the traditional camp oven.
Chicken Tagine with Pine Nuts and Raisins
Served with flatbreads
These flat breads are incredibly versatile. Use them as pizza bases, wraps, tortillas, serve them instead of naan or roti with curry, rip them up and serve with dips, chop them into triangles, toss them in some oil and fry till crispy and you have a base for nachos.
Basic, savoury and sweet Damper
The Orange Campfire Cakes have mixed success. I think it depends on what kind of cake mix you would like to use. I recommend a sponge type mix. You can add the juice from the orange instead of water if preferred, but the natural oils from the orange skin will flavour the cake anyway.
